Outfit: Icy Cold Monday
Greetings from the Frozen North. I knew it was going to be cold today so made sure I was out of bed in time to scrape the layer of frost ice off my car. In some places on my drive in it looked as if it had snowed so thick was the white frost. And to make matters worse, we are now on Day 7 of the office heating being broken.
Last night I tried out the One Minute Chocolate Cake again. I modified the recipe a bit and I think I have it perfect for me now (I found it too bitter before and hard to mix as there wasn't enough liquid in it). Here’s what I used:
• 1 tablespoon cocoa powder
• 3 tablespoons spelt flour (or white, or even peanut flour)
• 1/8 tsp salt
• 3 tsp sugar
• 1/4 tsp baking powder
• 1 stevia packet (or 1 more tablespoon sugar)
• 1 tablespoon coconut oil or vegetable oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I can’t personally vouch for the results if you make that substitution.)
• 4 tablespoons milk
• 1/4 tsp pure vanilla extract
Combine dry ingredients and mix very, very well. Add liquid, stir into a batter, then transfer to a little dish, ramekin, or even a coffee mug. Microwave 1 minute 40 to 2 minutes (check if it’s done). If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for it to cool before trying to remove it). Top with chocolate spread, chocolate sauce, frosting, whatever, and eat whilst it’s still warm.
Tonight we are meeting my sister, her husband, my parents and my sister’s in-laws for a meal at our favourite Chinese buffet. That means I’ll miss my gym class though, so I’ll have to be sure to go for a walk each day this week and I’m thinking of trying a different class tomorrow.
I got this skirt in River Island on Friday afternoon. I’d tried it on last weekend when I got my skinny jeans, but decided to think about it for a while (most unlike me, I know!). I still wanted it by Friday and had the right amount of cash saved up in my change pot. I could have done with putting some OTK boots or socks on to keep my knees warm though!
